Heavenly Delicious GF Pancakes

1 cup buckwheat flour

  • 2 cups raw milk or 1 cup coconut cream + 1 cup water

  • 3 eggs

  • pinch of salt

Blueberry compote: 

  • 1 cup coconut cream

  • 1/2 cup fresh/ frozen blueberries

  • 1 teaspoon cinnamon

  • raw honey to garnish

Place all the ingredients in a large bowl and mix well using a whisk. Preheat a small nontoxic, non-stick pan with 1 tablespoon of butter or coconut oil, on medium heat. Pour the batter in the pan, making the pancakes as thick as you like them. When the batter is starting to have little bubbles on the edges, turn the pancakes. Depending on thickness they will take about 2 minutes from each side. Serve With Butter, Cinnamon, Blueberries and maple syrup. Savory option: egg, bacon, butter, baby spinach and avocado mash.
